Wild Mountain is our mixed fermentation and barrel-aging program. Here you will find limited releases of specialty beers, inspired by the natural mountain-scape surrounding the brewery.
This ruby red sour is a blend of beer aged for a year in Scotch whisky and French Burgundy barrels. A pleasant tartness cuts through the notes of sherry and candy and finishes with a touch of raisin. This wonderfully complex beer is well rounded with a thick mouthfeel and a slight dryness which accentuates the oak flavours infused from the barrels themselves.
The base beer was a hugely complex mix of grains to achieve the wonderful red colouring and depth of flavour. This was lightly kettle hopped with Triskel hops from the Alsace region of France, and fermented with a blend of ale yeasts. The barrels were inoculated with our house blend of wild yeasts and bacteria and the beer was left to mature in in the barrels for 15 months.
