Wild · Sour

This is a wonderfully complex mixed-fermentation beer. One year’s aging in Chardonnay barrels brings superb aromatic depth and woody notes. The beer is fermented with our house culture, a blend of wild yeast and bacteria, which produces a punchy acidity and accentuates the subtle white wine notes of the barrel. It’s then macerated for several weeks in stainless steel tanks with redcurrants and limes, which dresses the aromatic base with a thick fruity coat and balances the oak notes. 750cl.
